Crispy Teriyaki Tofu & Veggie Stir-Fry

Ingredients:
- 1 block 14 oz firm tofu, pressed and cubed
- 2 tablespoons cornstarch
- 1 tablespoon vegetable oil
- 1 cup broccoli florets
- 1 bell pepper sliced
- 1 carrot thinly sliced
- 1/2 cup snap peas
- 1/4 cup teriyaki sauce
- 2 green onions chopped (for garnish)
- Sesame seeds for garnish
Directions:
Toss the cubed tofu in cornstarch until evenly coated.
Heat vegetable oil in a large skillet over medium-high heat. Add tofu and cook for 6-8 minutes, turning occasionally, until golden and crispy. Remove tofu from the skillet and set aside.
In the same skillet, add broccoli, bell pepper, carrot, and snap peas. Stir-fry for 4-5 minutes or until vegetables are just tender.
Return the tofu to the skillet and pour the teriyaki sauce over the tofu and vegetables. Stir well to coat everything in the sauce and cook for another 2-3 minutes.
Remove from heat and garnish with chopped green onions and sesame seeds. Serve hot.
